When Jock Douglas moved with his family to the property “Wyoming” near Roma Queensland in 1975 he noted the large clumps of desert lime trees growing naturally and fruiting generously in favourable seasons. The wonderful flavour of this native fruit had been long recognised by western Queensland pioneering families including his, with recipes handed down for refreshing drinks, conserves, sauces, and aioli.
